2024 Tinto : Barrel by barrel bottling for a unique experience.

Back in 2024, meteorological conditions, leading to a very high downy mildew ppressure led to us losing 65% of our production.
As a result, the tinto 2024 was made out of the blend of 11 plots. almost 3000 bottles, from 3 hectares of vineyards. An incredibly low yield. Thankfully, the harvest was in great shape, concentrated, yet still balanced.
For the sake of safety, I decided to follow a winemaking process I am convinced I can make into something elegant. My winemaking safe space. A whole cluster fermentation, that I can follow day to day, steering it towards my vision. Basically what I used to do in Burgundy, applied to our terroir.
Another result of that difficult year and low yields is that we did not buy any new barrels. meaning this wine aged 100% in used barrels, 10 of them to be precise.
After a year of ageing, we decided to proceed to the bottling of these barrels one by one, using our bronze "Chevre a deux becs"
This means roughly every 290 bottles, the wine changes slightly, since we would change barrel. I had dreamt of doing this type of precision work for years, but this wine leant itself wonderfully to the experiment : it is a bold wine, reducing variation from one barrel to the next, none of the barrels were new, reducing the impact of one barrel or another.
Still, I felt the need to be transparent about what you are served. Hence the mention of the barrel number on both the cork and the label. Two of the barrels will also be bottled late, 1 year later than the others.
