The Chèvre-à-becs

We have been bottling more and more wines with this centuries old method, thanks to a old bronze tool called in french a "chèvre-à-deux-becs", a two-beaked-goat would be the literal translation of it's name. However goat is an old name for a spigot. makes more sense.
This spigot is meant to be directly plugged into a barrel for bottling. Meaning we bottle the wine without any pumping, through the simple effect of gravity pulling it into the bottle.
No bottling method is more delicate, and we feel it in the wines, in their longevity and aromatic expression.
Wines bottled by this method will have and indication of it, either stamped on the label of on the cork, and they are amongst our most prized cuvées, as a special bottling of a particular barrel we tought merited unique care and attention.
